Veggie Burger, All Dressed Up


Ok, almost a month might just about be the longest I've ever gone without blogging. What can I say except it's the summer?

So this is a pretty typical summer dinner for me, especially while I was in DC. I'd start with something simple, like a frozen veggie burger, but then dress it up to make it a whole, more filling meal, with fresh ingredients, many from the greenmarket. 

This is a Morningstar burger (I don't remember the exact type, but it's just made of vegetables. It's not my favorite, but it does have 10g of protein, which is pretty good as far as veggie burgers go!). The bread is fresh from the greenmarket, sliced by hand (a bit of a pain, but it was nice because I was able to make it exactly as thin or thick as I wanted). Melted on the bread is shredded cheddar cheese from Whole Foods, sliced avocado, and then it's topped with frisé lettuce, also from the greenmarket.

I kind of piled the avocado on top of the frisé, because I wanted it to melt in the sandwich with the cheese, but I'm not a huge fan of warm avocado (which is going to be so ironic two posts from now). When I was ready to eat, I just put the warmed burger between the two pieces of bread, and ate! I had string beans for a side, in case you couldn't tell.
