Bean, Bok & Shrimp Quesadilla


I have quite a few posts lined up of the foods I've cooked in the past couple of weeks, and let me tell you, there are few you're going to see that are more colorful than this dinner.

This started as your average quesadilla - flour tortilla, mozzarella cheese on the bottom, some black beans, and shrimp. But then I wanted some green, some veg, to complete the meal. I opened my fridge, and there, staring me right in the face, was some fresh, delicious bok choy.

So I sautéed the choy, and added it in. And then I made sure all the cheese melted and made the tortillas super crispy. I cut it in four pieces, and ate. Definitely an unexpected combination, but one I would make a again. The crisp from the bok choy was nice, and the flavors all went together well.
