Swiss Chard & An Egg


Hello readers! Sorry for the leave of absence. To be honest, I was avoiding Blogger because I was convinced I hadn't eaten anything interesting in the past week or so and didn't even bother to check my memory card. But I had completely doubted myself! About a week and a half ago I took my first trip of the year to Whole Foods (yeah me and Trader Joe were in a pretty exclusive relationship before that), and so I made a few lunches and dinners out of the fresh ingredients I bought!


This over-easy egg on a bed of swiss chard is pretty similar to this kale recipe I made a few months ago. The difference is that in the kale recipe I talk about how my whole love for fried eggs over greens started at Smorgasburg with swiss chard, and here, I actually make it with swiss chard.

I sautéed both the greens and then fried the egg in Earth Balance "butter," so I like how that flavor matches. I also just love the color. The red stems, yellow yolk, and deep greens -- ahh! Too pretty.
