Egg Over-Kale
I got this idea of putting over-easy eggs over vegetables, first from a vendor at Smorgasburg who put an egg over sauteed swiss chard and toasted bread, and second from this post on Lottie + Doof. I absolutely adore that moment when you cut into the egg, and the yolk oozes out and pours over the vegetables. The thought of this used to gross me out, but now I love it.
Just a word on kale - I know I've been using a lot of it lately in recipes, but I swear I don't usually eat kale this often!! Kale is one of those vegetables that I love in the summer, but its stems are hard to cook, so fresh kale requires a lot of prep time to cut out the stems. However, I got really excited when Trader Joe's recently started selling pre-cut, ready to saute kale, in huge bags. I bought one, determined to finish the whole bag, and with this meal, I did!
