This all started with the spinach. I could tell that if I left it another day in the fridge it would start to wilt, so I decided it needed to be part of my dinner. I was in a pasta kind of mood, so I picked out some other ingredients to mix in along with the spinach.
Ingredients
baby spinach
sweet onion
avocado
pine nuts (bought in bulk - moins cher!)
feta cheese (TJ's low fat)
pasta (mine is a brown rice penne pasta)
How To Make It
Basically, I had three things going on at the same time. In a saute pan, I sauteed the onions, and then added the spinach until just about wilted. In the meantime, I was cooking the pasta in a pot, and put the dry ingredients - avocado, feta, and pine nuts - in the bowl. When the pasta and veggies were all ready, I mixed all the ingredients together.
I think that a lot of the time when people make a pasta dish, they assume that there has to be the most amount of pasta, and then smaller amounts of everything else. However, I really wanted this to be focused more on the vegetables, so I used lots and lots of them, and I think I ended up putting in equal amounts of vegetable and pasta.
