Tacos!


You see those two bags of frozen goodness? They made Monday night's dinner so easy. I literally just put a bit of each in a pan, and heated up the rice, beans, and vegetables!


Then I took corn tortillas (only 60 calories each, and gluten free!), and put them on the pan with a little oil. When they got crispy on one side, I filled them with the rice, bean, and veggie mixture, and ate! It was so easy to make, so filling, and so good.
