Spicy Market Salad


Even though I went grocery shopping Sunday morning, I was still tempted to stop by the farmers market in the afternoon. As I passed by each vendor, I couldn't help but purchase two items that stood out to me. One, was mushroom sprouts, which are spicy and awesome, and two, was squid, which is a cheap, delicious, and easy-to-make seafood.

As I walked back to my dorm with purchases in hand, I decided that I would use the two ingredients together that evening to make the most delicious salad of my life.



What You Need
rocket arugula
mustard sprouts
pine nuts
mushrooms
squid
vinaigrette
olive oil
salt & pepper
white wine

How To Make It
The salad ingredients are really simple - just mix them together! I don't really like raw mushrooms, so I chose to sauté mine, but either way would work. Just the same, any vinaigrette - homemade or store bought - could be used! Mine was a champagne vinaigrette from TJ's. I loved combining the arugula with the mustard sprouts, to make it extra spicy.

The calamari is the one part that actually needs cooking. First of all, make sure the squid you buy is pre-cleaned. It usually is, and so I made the mistake of not asking, and let me tell you, cleaning that sucker was not fun... I won't get into detail here. But once it is clean, just cut the tubes into rings, and marinate. I  marinated my rings in olive oil, white wine, and salt & pepper, and let it sit for about four hours. Then when it was time to cook dinner, I put them on the forman grill, and they were done in about 10 minutes!
