Yep, that's right. I fried avocado, and I put it in a salad. Pure heaven, am I right?
How to fry up that avo:
- Cut slices of avocado. The avo can't be too mushy.
- Lightly coat each slice in all purpose flour.
- Dip slices in egg.
- Roll in panko (japanese bread crumbs).
- Put into a hot pan with olive oil.
Flip once, and when they are done (you'll be able to tell, they'll get nice and crispy), put them on top of your salad! My salad is arugula leaves with dried cranberries and crumbled goat cheese.
