My suitemates and I have started a weekly tradition of suite dinners. Each week, a different person cooks dinner for everyone! We've done three weeks so far, and it's been really nice because we get to try something that that suitemate really enjoys, something they make a lot at home, or just something fun and new.
This past week was my week, and so I decided to make one of my favorite dishes that my mom makes a lot at home - shrimp tacos! I've actually posted a version of them on the blog before. But these are no ordinary shrimp tacos. The shrimp are cooked in peach salsa, which gives them a sweet and tangy flavor. The tortillas are made crispy right in the kitchen on a frying pan instead of buying pre-hardened taco shells. The feta and black bean toppings bring a perfectly complimentary taste of sharpness with the sweet salsa and shrimp. And of course, there is avocado. Which means nothing could go wrong.
I also made a salad: mixed greens, pecans, goat cheese, dried cranberries, and a homemade dressing made from balsamic vinegar, olive oil, and agave nectar, whisked together.
This dish was perfect to make because it was fun for everyone to put together her own taco, and it was really sharable. Hopefully there will be more updates of dishes made at future suite dinners! :]
