Mahi Mahi With A Side of Greens


This is a really good example of what a typical dinner has become for me in DC. I tend to cook lightly in the summer and meal-plan less, which means it's easier for me to not get all of the nutrients I need. Especially because I'm interning at a nutrition focused organization, I've started to really thing about hitting all of my food groups on a daily basis. So when I make dinner, I think - do I have a grain? Do I have a protein? Do I have a vegetable? Are my vegetables a variety of colors?

This is a mahi mahi burger on fresh bread from the farmers market, and on the side there is some sautéed kale, spinach, and onions. It is simple, but hardy and filling. And it hits all of my food groups.
