I just realized that I feminize the word omelette. Don't other people just spell it omelet plain and simple? This is what happens from looking through too many recipes at my internship during the day...
On a similar note, this omelet(te) is what happens when Trader Joe's starts carrying shredded brussels sprouts, and you not-so-accidentally buy too many bags of it (2 to be exact). I just sautéed those babies, no preparation needed, I think with a little oil and salt and pepper. I poured over the egg (1 yolk, 2 whites) and it's hard to see in the picture, but I'm pretty sure I put some cheese in there (either mozzarella or feta).
Regardless, this was bomb. And a great way to disguise the sprouts for those greenophobes out there.
