Roasted Corn, Pepper, and Onion Frittata


Only three days left before I move home! So basically, all of my meals are just me trying to get rid of all the food in my kitchen. This was an attempt to eat up the frozen vegetables. On a pan, I sautéed some TJ's frozen roasted corn, and TJ's fire roasted peppers & onions until they were defrosted and warm. I also added some fresh onions into the mix, because well, you can never have too many onions. I sprinkled on some mozzarella cheese (a chopped up low fat TJ's cheese stick), and then poured over the whisked eggs. I used one whole egg and one egg white. I LOVE how the cheese got all crispy, and the roasted flavor of the veggies made the whole thing extra good!
