There's a group on campus called "Challah for Hunger." Basically, every week, a group of student bakes homemade challah in all sorts of different flavors, and then sells them, and donates the profits to a charity to feed people in need. This week I decided to buy a loaf - the flavor was a honey wheat dough with chocolate chips and cinnamon sprinkled on top. All I could think was, this is going to make such good challah french toast...
In a bowl, I whisked an egg with a little bit of cinnamon and sugar. I sliced the challah, and I dipped each piece into the egg mixture. Then put the pieces on a buttered (aka earth balanced) pan, and cooked until the egg-y part was done, flipping halfway through.
The melty chocolate was definitely the best part. I didn't have maple syrup on hand, which is usually my go-to way to eat french toast, so instead I had one piece with jam, another piece dipped in agave nectar, and a little more plain (that chocolate does wonders).
