Tortilla and Black Bean Pie


So the award for the least photogenic food I have ever posted on the blog goes to...  the tortilla and black bean pie!! But even though the tortillas, corn, cheese, and onions are all the same color, and they blend in with the pan to look super bland, this dish is not. And you should make it.

I made this over spring break, and it was deeeeeelicious. And really fun to put together! I like that it's vegetarian, hits a bunch of food groups (including protein in the beans!), and of course that it's smothered in (low fat) cheese! What could be better? Here's the recipe: (I don't actually know where I got this recipe from, but I cannot take credit for it).

Ingredients
4 10-inch flour tortillas (but I used corn tortillas - [GF])
1 tablespoon canola oil (I used olive oil)
1 large onion, diced (I used white - maybe a purple one would give the dish more color?)
1 jalapeño chile, minced (not a spicy fan, left this ingredient out)
2 garlic cloves, minced (sorry, nothing to put in parentheses for this one)
1/2 teaspoon ground cumin
coarse salt and fresh ground pepper
2 cans of black beans, drained and rinsed
12 ounces of beer or 1 1/2 cups of water (I used beer)
1 10-ounce package of frozen corn
4 scallions, thinly sliced, plus more for garnish
2 1/2 cups shredded cheddar cheese (I used TJ's low fat mexican cheese blend)

How To Make It
1. Preheat the oven to 400F. Trim the tortillas to fit the pan you're using (circular works best).
2. Heat the oil in a skillet over medium heat. Add the onion, jalapeño (if you please), garlic, cumin, salt and pepper. Cook stirring occasionally until the onion is softened, 5 to 7 minutes.
3. Add the beans and beer to the skillet and bring to a boil. Then reduce the heat to medium and simmer until the liquid has almost evaporated. (Now the recipe says this part takes 8-10 minutes, but it took me like 30). Then, stir in the corn and scallions, and remove from the heat.
4. Put first tortilla in bottom of pan, and layer it with one quarter of the beans mixture and 1/2 cup of cheese. Repeat three times, using 1 cup of cheese on the top layer. Bake 20-25 minutes, until it's hot and the cheese is all melty! Sprinkle with scallions, slice, and serve.
