Spiced Chickpeas and Veggies


Mmm I love going food shopping and having lots of fresh veggies! Of course, the downside is that you have to use them asap so they don't go bad. For dinner, I sautéed some veggies - mushrooms and spinach - and added chickpeas for protein. For flavor, I used a little bit of olive oil, and really light indian spices (a pinch each of curry powder, garam masala, and cumin). Then I put some avocado slices on top, because nothing is better than avocado (that is not debatable).
