In some earlier posts I wrote about the pitim that I buy in bulk at whole foods. Well I needed a refill and didn't have the time to go to WF, so I bought TJ's Harvest Blend instead. It's mostly pitim, but also mixed in is some red quinoa, orzo, and baby chickpeas. This dinner was mushy and delicious and so comforting and mmm I would just eat it every night if I could.
What's Inside:
Harvest Blend
Avocado chunks
Sundried Tomatoes
Crumbled feta
Lemon Juice
Cook the grains as directed and then toss everything together!
