Pumpkin, I know. A little out of season, right? At least, that's what my friends at Dunkin Donuts told me when I went for pumpkin coffee the other day... that there is no more pumpkin coffee flavor because it's out of season!
(Yes, I realize this is a blog about health. But everyone has a guilty pleasure. And mine is DD pumpkin coffee).
Psh. I think January is still pumpkin season.
The truth is, I'd been trying to make this since Thanksgiving. First I had the pumpkin, but then I accidentally left the pumpkin at home and only had the coconut milk and veg broth. But finally, now over winter break, I got all of the ingredients in one place. And made this soup. I used this recipe pretty exactly, so check Food Coma for the steps to make the soup, and also check it out anyway because her photos of the soup are much prettier than mine. It was super easy to make, and I would highly recommend it!
(Just for the record, cheese fries are also a guilty pleasure. I can have two, right?)
