Orzo and Arugula Salad


This is one of my favorite recipes that my mom makes at home. It is so delicious and filling, and not too unhealthy! My favorite part is the toasted almonds - they add such a nice flavor to complement the creamy goat cheese and the sweet dried cherries. Here's the recipe:


Orzo and Arugula Salad

2 cups Orzo pasta cooked
Arugula
Dried Bind cherries
crumbled goat cheese
roasted almonds/toasted and chopped

Dressing:1/3 cup balsamic
1/2 cup evoo
1 tbsp (generous)  mustard
1 tbsp agave or honey

Make the dressing first. Then mix all of the ingredients, and toss in the dressing until coated. And that's really all there is to it!
