Kale, Onion, and Mushroom Sauté
This dinner is actually from Tuesday night, which was one of those nights where from 6-10, I was running between different activities, and so my "dinner" consisted of picking at snacks that were served at each activity. Even though I got back to my suite at 10ish and probably could have just not had dinner, I felt that I needed to eat something more substantial to balance out all the snacks I ate.
This was super easy to make - I melted some Earth Balance butter (which is not actually butter) onto a pan, and sautéed the onions, mushrooms, and then added in the kale, until it turned bright green. Kale is one of the most nutrient-packed greens, and it was really tasty with the other veggies mixed in.
