Curried Lentils




Aren't these lentils so pretty? I bought them in bulk at Whole Foods about two months ago, and ever since have been trying to find a good lentil recipe for them. I recently came across a recipe in Nutrition Action Healthletter for Curried Lentils, so I tried it out, and it was really tasty!

What You Need
1 onion
1 cup lentils
2 1/2 cups water
1 tsp curry powder
olive oil

How To Make It
Heat oil on a pan, and saute onions until browned. Then stir in the lentils and curry powder, and add the water. Simmer until the liquid is absorbed.


The recipe called for red lentils, but since I had this mixture, and different types of lentils take different amounts of time to cook, I found I needed to add more water. I also added more spices, like garam masala and cumin.

The end result was really tasty, but unfortunately, lentils don't keep their pretty colorfulness when they are cooked.


I had some leftovers, so the next day, I made a salad with mixed greens, lentils, goat cheese, and balsamic vinegar.
