Chili & Rice
If you're in the mood for a hearty, healthy, and easy meal, this is for you!
I started by cooking my brown rice, which I buy in bulk from Whole Foods. I love buying from there because not only is it inexpensive, but they let me put the rice directly in my mason jars, so no plastic bags are wasted!
When the rice was almost finished cooking, I heated this organic vegetarian chili on the stovetop. I love this stuff, because I don't have much of a spice collection in my college kitchen, and these beans and tofu are already spiced.
When both were ready, I poured the chili on top of the rice, for a wholesome, delicious dinner!
