Pecan, Goat Cheese, and Wasabi Arugula Salad


People think salads are simple and boring, but I refuse to acknowledge this and love making salads that are interesting and delicious. Here's how I made this one:

  1. Made homemade dressing (see previous post).
  2. Added Trader Joe's wasabi arugula, the spiciest, most kickin' lettuce on the planet.
  3. Crumbled on top a Trader Joe's goat cheese medallion.
  4. Toasted raw pecans in the oven, and sprinkled them on top.
It was so delicious! My favorite part is the toasted pecans, because I love temperature differences in foods (ie hot ingredient in an otherwise cold salad).


For the cheese, I love these goat cheese medallions from Trader Joe's. Not only are they delicious and reasonably priced, but they are portion controlled. Each medallion is 70 calories, and I only need to use one pack per salad.


Also, for some protein, I had a Trader Joe's Italian sausage-less sausage (yes, this blog should just be an advertisement for Trader's Joe's), along with the salad for dinner. These sausages are the shit - much better than the tofurky ones.


Overall, a very satisfying dinner!
