Brie & Tomato Frittata



I'm still trying to get rid of the mass amounts of brie in my fridge, so I decided to use some in an omelette! Brie oozing out anything is naturally delicious, and I threw in some tomatoes that I had in my kitchen for an extra something.

What You Need
Eggs (I use two - one whole, one white)
Brie cheese
Tomatoes (or anything else you think would be good!)
EVOO

How To Make It
I like to use more whites than yokes to make my omelettes, so I whisked together a whole egg and an egg white. I thought it was pretty funny because I don't actually have a whisk in my college kitchen, so I used a plastic fork to whisk the eggs together instead. Such college life. But anyway, I poured a drop of olive oil on the pan to grease it, added the eggs, and then quickly topped with tomatoes and the brie, before the eggs had really set. Half way through I flipped the egg, and it was done! I just love when omelettes come out perfectly round.
