Brie & Blueberries

I had a lot of studying tonight, and was in need of a late night snack. I don't keep chips around my dorm or any snacky food for that matter so that I can't be tempted, but I do have an abundant amount of brie in my fridge, because my friends and family know how much I love brie, and so, they bought me a whole bunch for my birthday.

Since I don't like wasting food and won't throw the cheese out, I figure I have two options: I can share it, or I can find ways to eat it in small portions. This snack accomplishes the second, and is a spin off of breakfast food I would eat when I was once (oh so long ago...) in France for a summer.

First, you need mini toasts, which are like small crackers. I then smeared about a nickel of the creamy part of the brie onto each toast. I topped each one with a dab of bonne maman wild blueberry preserves. This jam is a little more expensive than other brands might be, but the taste is unbeatable, and it lasts awhile, so the splurge is deserving.

Aren't they cute?
