I realized that nearly every time I made tofu this year, I made it asian style, with soyaki sauce. This time I wanted to change it up a bit... simplify it. I bought a mix of veggies from TJ's - asparagus, onions, and mushrooms, and just sautéed them in olive oil, with a little bit of salt and pepper.
I grilled the tofu on a george forman grill. To make the tofu a little crispier and give it some flavor, I dipped each piece in egg batter before grilling it.
This is the kind of dish that while you're eating it you realize how healthy it is, but there is so much of it that you also feel stuffed after. Feeling full from something super healthy and nutrient packed? I can't say no to that.
