Yesterday morning I went on my last grocery shopping trip of the school year. I have this week of classes and then one week of finals, and then it is summer vacation! Which is weird, because it's only April. But still, I'm excited for the break.
This final shopping trip was suprisingly not to Trader Joe's, but to Westside, a supermarket closer to campus. Although I don't like as many of their products, the one really great thing about Westside is that they sell fresh fish, which TJ's does not. I bought me these wittle baby scallops, and also some lovely swiss chard.
So I put them together! With orzo. I cooked the scallops first in butter and lemon juice, and sautéed the chard in the same. I loved how the pink from the chard's stem made the white orzo and scallops pink too! In the end I thought the dish could have been more flavorful, but it was a nice change of pace to have fish and veggies and pasta all together.
