Grilled Cheese


Yesterday I was craving grilled cheese. It occurred to me that I never make grilled cheese at school, because even though it's one of the easiest meals to make, I don't usually have a loaf of bread in my apartment. So yesterday, when I was craving grilled cheese, and there was bread at my disposal, I decided to go for it, and made it a bit fancy while I was at it.

What You Need:
Two slices of thick, whole wheat bread
tablespoon of Earth Balance vegan buttery spread
low fat cheese of your choice
avocado
baby spinach

How To Make It
1. Sautee the spinach until almost wilted, and then remove it from the pan to be used later.
2. Melt butter onto the pan. I use the earth balance spread - it melts and tastes like butter, but is a bit healthier for you!
3. Put a piece of bread on the buttered pan, and cover with cheese. I used a mixture of cheddar and mozzarella cheese on mine.
4. Put the other piece of break on top, and cover with a lid. The lid will contain the heat to help the cheese melt. Flip once through, until both sides are a little toasty, and the cheese has melted.
5. Remove the lid, and take off the top piece of bread. There should be cheese melted to both pieces of bread. Add avocado slices and the baby spinach in between. Then put the piece of bread back on, and it should all stick together because of the melted cheese!
6. Flip again until the bread is toasted to perfection and the spinach and avocado are warmed.


My brother made this too, but he decided to use a brioche roll instead of the whole wheat bread. Try different variations and see which way you like it best!
