Today is the first official reading day to prepare for finals, but this whole weekend I already felt a bit in finals mode, aka, I needed some quick meals! I went to Trader Joe's on Friday to stock up on some "fast food" to get me through this upcoming week.
I just wanted to share this dinner because I think it's a great example of a wholesome quick meal. Both the salmon and lentils are pre-made TJ products. The lentils are already cooked and lightly seasoned, so I just had to open the package instead of spending 30-45 minutes to cook. And then the salmon on top is just a salmon burger. So I layered the salmon burger over the bed of lentils and voila! Quick delicious healthy dinner, plus energy to study!
